Mom's Applesauce


This is my mom's Applesauce recipe!  I substituted the sugar for honey to keep this Paleo friendly.
This is a fast go-to recipe that goes good with just about anything.



Ingredients
5 lb Apples (you can use any amount of apples you want, adjust honey at the end to taste)
1 Tbs Honey
Splash Water
1 Tbs Cinnamon

Directions
Peal, core and slice apples.

In a large-ish stock pot and put enough water to just cover the bottom.
(If you need to add more water later you can, just to keep apples from burning.  However when the apples start to break down there will be enough moister.)

Add the apples to the pot and simmer on medium.  Stirring occasionally and chop at the apples to help break them down.  Once the apples are mushy (do not over cook or applesauce will be dry) remove from heat.
(If you like your applesauce with no lumps use a stick blender to make it smooth.  Otherwise, mash up with spoon to the texture of your liking.)

Add the honey at this point to taste and sprinkle with cinnamon.
(If you are not a Paleo follower, you can always add sugar, I suggest for a 5 lb batch about 1/2 a cup of sugar.)
