Flaxseed Focaccia

This Focaccia is really good!  Super satisfying for the craving to have a sandwich with bread.
You can put any type of sandwich filling in it and add any topping to the focaccia when baking.

Preheat oven to 350 degrees.  Makes 3 sandwiches worth of bread.



Ingredients

2 Cups Ground Flaxseeds
1 tsp Baking Powder
4 Eggs, whisked
1/2 Cup Water
1/3 Cup Olive Oil
Salt

Directions

Preheat oven to 350 degrees.

Combine all dry ingredients in a mixing bowl.  Add water, olive oil and eggs; mix well.

Line a baking tray with baking paper and pour on the flaxseed mixture.
Run a spatula over the mixture to create and even layer of around 1.5 cm thickness.
(This should cover just about the whole baking sheet.)

Place the tray in over and bake for 20 minutes.

Remove from oven and place focaccia upside-down on a cooling rack and peel off baking paper.
Cut in half lengthwise and then into 3 pieces each, this makes 3 sandwiches worth of focaccia.

** You can add toppings to the bread before or in middle of baking.


Topping ideas

Toppings Before Baking:

Olives and Sundried Tomatoes
Herbs and Salt (Oregano, Italian Herbs, Salt)
Onion and Pepper
Olive and Rosemary
Roast Bell Pepper and Onion
Herbs and Pecans (Oregano, ground Coriander, Italian Herbs)

Toppings Added 10 minutes into baking:

Tomato and Basil
Bacon and Walnut

  2. Thanks Claire! I will post a picture next time I make this bread. I forgot last time and it is all eaten up since then.
    Just to let you know, it comes out very thin and dark brown.
