Meat Fist Doneness Test (MFDT)


This is a fast way to check your Steaks to see how done they are!
Remember, cutting into a steak will also tell you how done it is, but this also lets out the juices and can cause the meat to be dry.
Lastly, when you take the meat off the heat, you want to let it rest, under some tinfoil, to let the juices reabsorb into the meat so that they will not run off when you cut it.  Letting it rest a few minutes will also let the meat cook a little longer, so do not over cook steak!!!


Well Done
Make a tight fist.  Press, as seen in the picture, on your hand between your forefinger and thumb .
The firmness of this spot on your hand indicates a Well Done steak.

Medium Rare
Make a relaxed fist.  Press in the same spot.
This firmness indicates a Medium Rare or Medium steak, depending on how lose your fist was.

Rare
Relax your whole hand.  Press in the same spot.
This softness indicates a Rare steak.

*If the steak is also still cold in the center when you cut into it, this is called "Blue".  Most restaurants will not do "Blue".  Also depending on the cut, you may not want it this rare.
Next time you are at a really nice restaurant or good steak house, ask about what "doneness" is best with the cut of steak you are ordering.  In my experience, most chefs at good restaurants will suggest medium rare.  As I like red on this inside this is perfect for me!!
