Kale with Tomatoes


This is one of the easiest side dishes to make, not to mention wonderful!
It literally is 2 main ingredients, and Kale is one of the most healthy vegetables you can eat!

Serves 4-6


Ingredients

2 Bunches Kale (I use Dino Kale for this dish)
3-4 Tomatoes, diced
Olive Oil
Salt


Directions

Put some Olive Oil in a pan, about 1 Tbsp, and heat on Medium.

Wash throughly the Kale, and chop into bit size pieces.  
*I like to remove the though vein, but my husband likes this part so test out what works best for you.

Cook the Kale in the Olive Oil for a few minutes until the leaves start to take on some browned color.  The Kale will pop like popcorn!

Then add 1-2 Tbsp water to the pan, the Tomatoes and a sprinkling of Salt.
Stir the ingredients and turn down heat, cover and cook for a few more minutes until the Kale is soft but still has a crunch, al dente.

Serve.
